Welcome to the Charqute Summer Cheese Series! I’m Karreno Alexanyan from Charqute, and today I’m teaming up with my friend Chef Roman Keshishyan from Vienna Luna Catering to bring you an unforgettable summer slider.

This isn’t your typical backyard burger. We’re talking premium Wagyu sliders with grilled fresh peach slices, creamy burrata, sweet caramelized onions, and our Chef’s Special Sauce that’s spicy, tangy, and just a little exotic.

Let’s Talk Sauce: Chef’s Special

We know you want the secret. Here’s our take on it:

Think Thousand Island meets Middle Eastern pantry staples. It’s creamy, tangy, spicy, and just a bit exotic thanks to Aleppo pepper and pomegranate molasses.

This sauce brings the whole slider together, with layers of sweetness, heat, acidity, and richness that make each bite pop.


Recipe: Wagyu Sliders with Grilled Peach, Burrata, Caramelized Onions & Chef’s Special Sauce

Here’s how to make it at home — just like we did with Chef Roman Keshishyan.


Ingredients

For the Sliders:

  • 1 lb Wagyu ground beef or pre-formed slider patties

  • 2 ripe peaches, sliced into thick wedges for grilling

  • 8 oz fresh burrata cheese

  • 1 large yellow onion, thinly sliced

  • Slider buns or small brioche rolls

  • Olive oil 

  • Salt & freshly ground black pepper

  • Fresh basil or mint for garnish (optional)


For the Chef’s Special Sauce:

  • ¼ cup mayo

  • 2 tbsp ketchup

  • 1 tbsp pomegranate molasses

  • 1 tsp Aleppo pepper (or mild chili flakes)

  • 1 tbsp finely diced pickles or relish

  • 1 tsp Dijon mustard

  • Pinch of salt and black pepper

  • Optional: squeeze of lemon juice


Instructions

1️⃣ Make the Chef’s Special Sauce:

  • In a small bowl, combine all sauce ingredients.

  • Mix until smooth.

  • Chill until ready to use.

2️⃣ Prep the Wagyu Sliders:

  • Form slider-sized patties if needed.

  • Season generously with salt and black pepper.

3️⃣ Grill the Sliders:

  • Heat grill or skillet over medium-high.

  • Brush lightly with olive oil.

  • Grill sliders for ~2–3 minutes per side until nicely browned but juicy.

4️⃣ Caramelize the Onions:

  • Heat a pan over medium with butter or olive oil.

  • Add sliced onions with a pinch of salt.

  • Cook, stirring occasionally, until golden brown and soft (about 10–15 minutes).

5️⃣ Grill the Peach Slices:

  • Brush peach wedges with olive oil.

  • Grill for 1–2 minutes per side until lightly charred and caramelized.

6️⃣ Assemble the Sliders:

  • Place cooked Wagyu patty on the bottom bun.

  • Add a few slices of grilled peach.

  • Pile on caramelized onions.

  • Spoon burrata on top to melt slightly.

  • Drizzle generously with Chef’s Special Sauce.

  • Add top bun.

7️⃣ Serve Immediately:

  • Enjoy warm while everything is melty and delicious.
